HI EVERYONE. Thank you so much for signing up! Eddie and the girls are SUPER thankful for all your help and all your kind thoughts! Eddie told me the other day he had "the most amazing meal." It was a hot brisket sandwich. Just wanted to reach out and say if anyone wants to make Eddie a simple "meat and potatoes" dish HE can make the girls a "kid meal." He is super appreciative of ANY and ALL the dinners but I got the sense this hot sandwich was one of his favorites. If anyone wants to make a meal geared to Eddie he loves SIMPLE "meat and potato" dishes. Meatball subs, pulled pork or chicken, roast chicken, brisket, sausages etc. No one has to change their plans, I just thought I would update. THANK YOU!!!! The girls are "picky" so the simpler the better or better yet- send Eddie a portion of whatever you are making for dinner tonight and send the girls some fresh fruit or lunchbox snacks. The girls like SIMPLE mac and cheese, tater tots are. fav, steamed and salted edamame has gone over well, chicken lo mein from Hunan Wok (not kidding) Tacos, burgers, dogs, corn (on the cob or off) Nutella, fresh fruit, lunch box snacks of any kind they also like fried chicken, breakfast for dinner and SIMPLE turkey and cheese sandwiches with a little mayo. I've also served them some tortellini (PLAIN) that went over well.

Least Favorite Meals

no lasagna, baked zitis, casseroles, etc. FULL trays of things are TOO much. He feels so bad when it goes to waste. 1-2 servings is plenty!

Erin was an amazing person, nursing was truly her passion and it showed in the care she provided to her patients and coworkers in need of help or a good laugh. She was a bright light in the peds ED and anytime we worked together I felt a sense of relief that I had her by my side.
