Meal Train® for Diane

Many friends and family have asked how they can help Diane during her recovery from brain surgery. The best way would be to prepare a gluten-free dinner for her family. As Diane will be unable to drive, lift or cook for about a month, she has requested that friends either cook a meal and deliver it, or place an order at a local restaurant and schedule delivery. She'll be on pain meds so every little bit helps. Thank you for your generosity! You are welcome to stay and share the meal as long as Diane is up for company. Allergies or Restrictions

Diane has a severe sensitivity to gluten, including flour, wheat, malt, barley and yeast. Please check all ingredients as they can be hidden in breaded meats, sauces, gravies, soups, and dressings. It is best for her to avoid processed foods, fried foods and spicy foods. She can eat gluten-free pasta but doesn't care for the taste of it too much. It doesn't re-heat well, and hardens if stored in the refrigerator. While there are plenty of gluten free breads and pizza, they don't sit will in her stomach and she prefers to go without them.

There is one brand of bread that she can tolerate, so she keeps that in her freezer. She keeps gluten-free salad dressings in her fridge. Diane's Favorite meals Diane often eats a chef salad or chicken salad with no croutons or dressing. She uses her own gluten-free dressing at home. Side dishes made with potatoes, rice, fruits, vegetables, cheese, eggs, and mayo are all safe. Some of Ashley's favorite meals are: Panera - Modern Greek half salad or Strawberry poppyseed half salad w/chicken Blaze, Ario's, etc. - Pepperoni pizza Boston Market- rotisserie chicken meal or market bowl (no gravy) w/sweet potatoes, green beans, corn Moe's/Chipotle- hard shell tacos or bowl w/chicken, chunky salsa, cheese, cilantro, cucumbers, raw onions Subway - rotisserie chicken sub w/ no cheese, no mayo/oil, w/green peppers, onions, cucumbers Her favorite homemade meals include stir fry and rice, pasta and meatballs or meat sauce, roasted chicken and potatoes, hamburgers and tacos. Least Favorite meals Please note that Ashley does not like fast food such as McDonalds, Burger King or Wendys. She also doesn't like melted cheese on anything except pizza. Diane does not care for fish too much.

8/20 Update

Hi it's Diane. It's been one month since my surgery. I can't thank everyone enough for sending meals to our family. It has been a tremendous help. And all the get well cards, emails, and prayers have definitely helped me through my surgery and recovery. I am slowly recovering and I've been able to take some short drives over the past few days. I am still not able to bend until my next doctor's appt. near the end of September as it can cause pressure on the brain. I have been taking short walks around the neighborhood. I still need to take naps during the day, but I am hoping in another month I will get back my energy. I am up for visits as my normal voice has returned. Since we weren't able to take a family vacation this summer, we booked a three-day getaway at the end of next week to Old Orchard Beach, Maine. I am looking forward to sitting on the sand and breathing in the ocean air!...

8/13 update

Hi, this is Diane. My recovery is on track. My voice has come back with some speech therapy so I am up for visitors this week and next. I have been getting physical therapy to help my balance and today I took a longer walk around my neighborhood. We've been enjoying delicious meals from our friends and it has been a big help - thank you so much! I still need to nap a lot and I am still not driving. Recovery is slow and steady. We planned a three-day getaway to Old Orchard Beach in Maine at the end of August so I can breathe in the ocean air and relax on the beach. Looking forward to getting out of the house!...

Hey, Diane here. Post op care has been great. We have been getting delicious meals served to us from our friends and church family which has helped a lot. I have been very short of breath, so the simplest of tasks overexerts me. Today I had an occupational therapist visit who gave me some excellent breathing exercises for my endurance and which may also help to strengthen my voice. Plus some bonus arm exercises for my weak shoulder. I am doing so well that my parents left today. Now it's up to me to stay on schedule with my exercises but my candy striper is here to keep me on track. Thank you everyone for your support! It takes a village!...
