All food prepared for the Cove must be prepared in a kitchen that has been inspected and approved by the Waco-McLennan County Public Health District. Many churches and organizations that work with Meals & Wheels meet this requirement. Volunteers will sign a memorandum of understanding (MOU) with the Cove before preparing or delivering food. 2. When preparing food to be delivered to the Cove, each volunteer must follow the Waco-McLennan County Public Health District’s food safety and hygiene protocols, listed below. 3. At least one volunteer in a group of volunteers preparing a meal must be ServSafe certified. The Cove will coordinate these certifications in partnership with Baylor Campus Kitchens. Each ServSafe certified volunteer must always be present when his or her volunteer group is handling food or working in the kitchen. 4. Volunteers must record the temperature of the food at the location where it is prepared and then again once the food arrives at the Cove. Volunteers will log this information in the Cove’s food safety notebook (kept in the kitchen). 5. Each meal volunteer will be trained on how to take and log food temperatures before they begin volunteering. 6. Food delivered to the Cove must be transported in insulated containers.
